Vanilla Yellow Cake
This vanilla yellow cake makes a great base for a variety of other mixins and flavors. The ingredients listed are for a single layer 9x13 cake. Increase by 50% for a thick enough 9x13 to cut into two layers.
Ingredients
Dry
- 300g Cake Flour
- 1 tsp baking powder
- 1 tsp baking soda
- 0.5 tsp salt
Wet
- 4 large eggs
- 300g white sugar
- 2 tsp vanilla extract
- 175mL Vegetable oil
- 240mL buttermilk
Instructions
- In a small bowl, sift and combine flour, baking powder, baking soda, and salt
- In a large bowl, whisk eggs until whites and yolks are fairly evenly emulsified
- Add sugar to the bowl with eggs and mix until combined
- Add vanilla and vegetable oil to the sugar and egg mixture and whisk until combined
- Mix one third of the flour mixture into the wet ingredients
- Mix one third of the buttermilk into the main ingredients
- Repeat the previous two steps until all flour and milk is combined
- Bake at 350F for approximately 30 minutes. For larger cakes, this may take up to an hour. Check every 10 minutes with a toothpick until it comes out clean, or with a thermometer until the cake is 210F
