Vanilla Yellow Cake

This vanilla yellow cake makes a great base for a variety of other mixins and flavors. The ingredients listed are for a single layer 9x13 cake. Increase by 50% for a thick enough 9x13 to cut into two layers.

Ingredients

Dry

  • 300g Cake Flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt

Wet

  • 4 large eggs
  • 300g white sugar
  • 2 tsp vanilla extract
  • 175mL Vegetable oil
  • 240mL buttermilk

Instructions

  1. In a small bowl, sift and combine flour, baking powder, baking soda, and salt
  2. In a large bowl, whisk eggs until whites and yolks are fairly evenly emulsified
  3. Add sugar to the bowl with eggs and mix until combined
  4. Add vanilla and vegetable oil to the sugar and egg mixture and whisk until combined
  5. Mix one third of the flour mixture into the wet ingredients
  6. Mix one third of the buttermilk into the main ingredients
  7. Repeat the previous two steps until all flour and milk is combined
  8. Bake at 350F for approximately 30 minutes. For larger cakes, this may take up to an hour. Check every 10 minutes with a toothpick until it comes out clean, or with a thermometer until the cake is 210F
