Marshmallow

Makes marshmallow. Vary the mixing time to change the texture of the marshmallow.

Ingredients

  • 3 packets unflavored gelatin
  • 225mL water
  • 300g sugar
  • 324g Light corn syrup
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Powdered sugar
  • Cornstarch

Instructions

  1. Add gelatin and half of water to bowl of stand mixer, allow to bloom for at least 10 minutes
  2. In a pot, combine remainder of water, sugar, corn syrup, and salt. Bring to 240F as exactly as possible
  3. With mixer running, pour sugar syrup while hot down side of bowl into gelatin
  4. Mix on high for 12 - 17 minutes; the longer it mixes the "firmer" the marshmallow
  5. About 1 minute before the end of mixing time, add vanilla extract in. Do not over-add vanilla
  6. Spray a pan of your choice (for 3 packets, a 9x13 works well) with non-stick spray and gently coat with a 50/50 mix of powdered sugar and corn starch
  7. Scoop marshmallow into pan
  8. Sprinkle top with 50/50 powdered sugar and corn starch mix
  9. Allow to rest lightly covered for at least 4 hours
  10. Use sugar/cornstarch mixture to coat tools and cut edges of marshmallows. Keeps in air-tight container for approximately 2 weeks.
