Marshmallow
Makes marshmallow. Vary the mixing time to change the texture of the marshmallow.
Ingredients
- 3 packets unflavored gelatin
- 225mL water
- 300g sugar
- 324g Light corn syrup
- 1/4 tsp salt
- 1 tsp vanilla extract
- Powdered sugar
- Cornstarch
Instructions
- Add gelatin and half of water to bowl of stand mixer, allow to bloom for at least 10 minutes
- In a pot, combine remainder of water, sugar, corn syrup, and salt. Bring to 240F as exactly as possible
- With mixer running, pour sugar syrup while hot down side of bowl into gelatin
- Mix on high for 12 - 17 minutes; the longer it mixes the "firmer" the marshmallow
- About 1 minute before the end of mixing time, add vanilla extract in. Do not over-add vanilla
- Spray a pan of your choice (for 3 packets, a 9x13 works well) with non-stick spray and gently coat with a 50/50 mix of powdered sugar and corn starch
- Scoop marshmallow into pan
- Sprinkle top with 50/50 powdered sugar and corn starch mix
- Allow to rest lightly covered for at least 4 hours
- Use sugar/cornstarch mixture to coat tools and cut edges of marshmallows. Keeps in air-tight container for approximately 2 weeks.
