Buttermilk Biscuits

A classic.

Makes some biscuits.

Ingredients

  • 250g flour (1/4 cake, 3/4 AP or all AP)
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp salt
  • 7 Tbsp unsalted butter, chilled in freezer and cut into thin slices
  • ¾ cup cold buttermilk
  • 2 Tbsp buttermilk for brushing

Instructions

  1. Whisk flour, baking soda, salt, baking powder together in a large bowl
  2. Cut butter into flour using pastry blender until it resembles coarse crumbs (about 5 minutes)
  3. Make a well in the center and pour in buttermilk.
  4. Stir until just combined.
  5. Turn dough onto floured work surface, pat together into rectangle
  6. If filling add one layer of filling here
  7. Fold rectangle in thirds.
  8. Rotate a quarter turn. Press into rectangle.
  9. Fold rectangle in thirds.
  10. Rotate a quarter turn. Press into rectangle.
  11. If filling add one layer of filling here
  12. Fold into thirds
  13. Roll dough out to about ½ inch thick
  14. Cut out or slice into biscuits
  15. Press indent in the top of each biscuit with thumb
  16. Brush biscuits with buttermilk
  17. Preheat to 425F
  18. Bake for approximate 15 minutes
