Buttermilk Biscuits
A classic.
Makes some biscuits.
Ingredients
- 250g flour (1/4 cake, 3/4 AP or all AP)
- 2 tsp baking powder
- ¼ tsp baking soda
- 1 tsp salt
- 7 Tbsp unsalted butter, chilled in freezer and cut into thin slices
- ¾ cup cold buttermilk
- 2 Tbsp buttermilk for brushing
Instructions
- Whisk flour, baking soda, salt, baking powder together in a large bowl
- Cut butter into flour using pastry blender until it resembles coarse crumbs (about 5 minutes)
- Make a well in the center and pour in buttermilk.
- Stir until just combined.
- Turn dough onto floured work surface, pat together into rectangle
- If filling add one layer of filling here
- Fold rectangle in thirds.
- Rotate a quarter turn. Press into rectangle.
- Fold rectangle in thirds.
- Rotate a quarter turn. Press into rectangle.
- If filling add one layer of filling here
- Fold into thirds
- Roll dough out to about ½ inch thick
- Cut out or slice into biscuits
- Press indent in the top of each biscuit with thumb
- Brush biscuits with buttermilk
- Preheat to 425F
- Bake for approximate 15 minutes
