  1. Place butter in freezer for 5 minutes prior to beginning
  2. Preheat oven to 425F
  3. Combine flour, baking powder, sugar, and salt in a large bowl
  4. Grate (or use a pastry cutter) the butter into the flour mixture
  5. Mix the butter and flour until it looks crumbly
  6. Combine milk with sourdough starter and whisk
  7. Add milk mixture to flour, and combine (hands or wooden spoon!)
  8. Turn out onto floured surface
  9. Work dough together until it is cohesive
  10. Book fold the dough, rotate 90 degrees. Repeat four times.
  11. Flatten the dough with your hands to approximately 1" thick
  12. Cut the dough into biscuits and place onto baking sheet
  13. Optionally brush the tops of the biscuits to assist with browning
  14. Bake at 425F for 14 minutes
